SMOKY SAUSAGE & BEAN CASSEROLE
serves 4-6
1 X Onion, Sliced
1 X Sweet Pepper, chopped into small dice
1 Tin Beans
1 x Packet Vegan Sausages
1 X Tin chopped Tomatoes
1/2 tsp Vegetable Boullion powder
1 tsp Smoked Paprika
black pepper to taste
2 Tbsp Vegetable Oil
Heat Oil in a pan and saute the onion & peppers & add the smoked paprika. Cook until onion & Peppers are softened. Add tomatoes, beans and sausages and stir well. Stir in the boullion powder and add some water if the mixture is too thick. You could also add some chopped courgette, cooket carrfot, celery, peas etc. Cook for 10 mins. Add pepper to taste
STUFFED BAKED APPLES
Wash apple and remove core with a corer/potato peeler. Cut a ring into the skin all around the middle of the apple, to stop it exploding! Place in an ovenproof dish and stuff with a mixture of any of the following;
Raisins
Sultanas
Dried Apricots
Chopped/ground nuts
Dates – just use what you have available
Mix a handful of dried fruits with a tsp of brown sugar and stuff the apple with the mix. Cover with a sheet of foil and bake on 180’/ Gas mark 5 for about 25 minutes
CASHEW NUT CREAM
Soak 150g of raw cashews in cold water overnight. Rinse and drain. Put nuts into a blender with enough water to cover them. Whizz until smooth and creamy. Add more water if the cream is too thick.
